While it's hard for me to tire of my go-to overnight oats combination, it's fun to mix things up every once in a while — and that's where this seasonal twist comes in handy.

You might not be able to enjoy a slice of pumpkin pie every night, but this breakfast will help curb those sugary cravings. Adding a tablespoon of pumpkin puree and a teaspoon of pumpkin pie spice totally transforms the flavour of your oats to taste like dessert and helps bring even more immunity-boosting vitamin A to your breakfast. Ingredients

  1. 120 mL almond milk
    45 grams rolled oats
    1 tablespoon pumpkin puree
    1 teaspoon vanilla extract
    1 teaspoon pumpkin pie spice
    Pepita seeds, to garnish

Directions

  1. Mix all the ingredients together, except the pepita seeds, in a glass jar. Stir well, cover, and refrigerate overnight.
  2. The next morning, remove it from the fridge, top it off with your seeds, and enjoy!
