- 1 sweet potato
60 grams ground turkey
45 grams kidney beans
1 serving pico de gallo (salsa salad)
2 tablespoons cheddar cheese
- Pierce the sweet potato skin a few times with a fork. Place on a microwaveable plate and microwave for 5-8 minutes, rotating halfway through.
