Do you know of someone who doesn't like banana bread? This recipe will surely change her mind. Oh, and did we mention it's healthy? Yep, that's right. One hundred fifteen calories per slice. Yes, we will repeat that for you. One hundred fifteen calories per slice. We calculated it out just for you. Why is it healthy, you ask? Because it uses egg whites, Greek yogurt, and minimal oil. It's a lower fat, healthy option, and the coconut provides some good fats, too. It also provides a bomb of flavor goodness in your mouth. Moist, delicious, tropical savoury sweetness.

Healthy Coconut Banana Bread

Ingredients

  1. 210 grams all-purpose flour
    1 teaspoon baking powder
    1 ¼ teaspoon baking soda
    3 large ripe bananas, mashed
    105 grams of brown sugar
    1 teaspoon vanilla
    3 egg whites
    ½ tablespoon olive oil
    70 grams fat-free plain Greek yoghurt
    60 mL orange juice
    2 tablespoons skim milk (optional)
    40 grams plus 2 tablespoons sweetened flaked coconut

Directions

  1. Preheat the oven to 350°F/ 180°C/ 160 Fan .
  2. Mix the flour, baking powder, and baking soda together in a mixing bowl.
  3. In a separate large mixing bowl, combine mashed bananas, brown sugar, and vanilla. Add egg whites and mix together until smooth. Next add oil. Then slowly add in the flour and combine until moist. Next add the Greek yoghurt and orange juice. (Depending on the consistency, you can add 2 tablespoons of skim milk. If you like your bread more dense, omit the milk, but if you like it more airy or lighter, you can add it.) Lastly add the 40 grams of coconut, and mix together.
  4. Pour into a greased 9-by-5-inch loaf pan. Sprinkle 2 tablespoons of coconut on top.
  5. Bake for 50-60 minutes or until a toothpick comes out clean and the bread is golden brown.
