Healing Veggie Soup

  1. 2 tablespoons olive oil
    1 medium onion, chopped
    4 medium carrots, chopped
    1 medium daikon root, chopped
    960 mL chicken stock
    1 teaspoon sea salt
    Fresh parsley, garnish
    Fresh pepper, garnish

  1. Heat the olive oil in a large saucepan over medium heat. Sauté the onion for 8 to 10 minutes, until soft and translucent. Add the carrots and daikon, and sauté for 15 to 20 minutes, until the vegetables start to brown.
  2. Add the stock to the saucepan, and bring to a boil. Lower the heat, and simmer for 30 minutes. Remove from the heat, and let cool for 15 minutes.
  3. In a high-powered blender, carefully purée soup in two batches until smooth, then transfer to a clean saucepan.
  4. Stir in the salt, reheat, and serve. Garnish with parsley and a sprinkle of fresh pepper, if you wish.
