Put your slow cooker to delicious use and make a comforting chilli with a touch of sweetness thanks to sweet potatoes. And you can prep everything the night before and then add it to your slow cooker first thing in the morning. You'll be welcomed home with a delicious bowl of chilli.
Just fill your slow cooker with the ingredients, turn to high, and in six to eight hours, you're ready to eat.
- For the chilli:
2 sweet potatoes, peeled and chopped
1/2 onion, diced
2 cloves garlic, diced
1 (420 gram) tin crushed tomatoes
1 (430 gram) tin white beans, drained and rinsed
1 (430 gram) tin kidney beans, drained and rinsed
1 (430 gram) tin black beans, drained and rinsed
1 red pepper, chopped
1 yellow pepper, chopped
1 (35 gram) packet chilli mix
480 mL vegetable stock
- For the toppings:
Crumbled tortilla chips
Shredded cheddar cheese
- Add all ingredients to your slow cooker and set to high. Cook for 6 to 8 hours, or until the sweet potato is fork tender.
- Top with your favourite toppings, such as sour cream, shredded cheese, fresh lime, and avocado.
