If you remember creamy Fudgsicles when you were a kid, whip up this healthier version made without high-fructose corn syrup or added sugar. Plus, you won't find a drop of dairy in these frozen treats.
For an added sweet bonus, these homemade Fudgsicles are filled with fresh strawberries — the perfect complement to the chocolatey goodness. And even better news? Each one is under 80 calories.
- 1 cup chocolate soy milk
1/4 cup raw, unsalted cashews
8 strawberries, sliced
- Place all the ingredients except for the strawberries in a blender, and mix until smooth.
- Fill six large Popsicle molds three-quarters full with the chocolate mixture. Add a tablespoon or so of sliced strawberries to each mold, and fill with remaining chocolate mix.
- Place the sticks in the molds, and freeze for several hours or until completely frozen.
