Chocolate-Covered Roasted Chickpea Clusters Recipe

This 2-Ingredient Chocolate Treat is Crunchy and Sweet — but It's Not Made With Peanuts!

If you're craving chocolate nut clusters, here's an equally decadent and crunchy version that's lower in fat and calories, yet high in protein and fibre. There are just two ingredients in this recipe: canned chickpeas (that you roast to get that crunchy nut-like texture) and dairy-free dark chocolate.

Just roast a can of rinsed and dried-off chickpeas in your oven at 350 degrees for 35 minutes or until crunchy. Add the hot chickpeas to 100 grams of dairy-free dark chocolate (Trader Joe's Dark Chocolate Chips would be perfect!) and stir well to melt the chocolate as you coat the chickpeas. Drop tablespoons of the mixture onto a baking sheet lined with parchment paper and allow to cool slightly before placing them in the fridge to set. Yummy!
