Every time I go to my local Trader Joe's, which is about two to four times a month, I grab a tub of this Vegan Kale, Cashew & Basil Pesto. It's creamy and so flavourful, and not just for pasta! Here are some healthy ways you can use your tub and create some amazing, unforgettable meals.
Avocado Pesto Pasta
Make this oh-so-creamy, warm, and delicious homemade pesto pasta [2] by puréeing ripe avocado with Trader Joe's vegan pesto and garlic powder.
Pesto Pizza
Sauté veggies in Trader Joe's vegan pesto, then instead of tomato sauce, spread a layer of pesto on whole wheat pizza dough, top with the pesto veggies, and pizza is served!
Stuffed Shells or Lasagna
Purée soft tofu with Trader Joe's vegan pesto in a food processor, and use it for the filling in stuffed shells [3] or vegan lasagna [4].
Pesto Paninis
Spread some Trader Joe's vegan pesto on two slices of sourdough or whole wheat bread, and make a panini — I used Chao Creamy Original Vegan Slices [5].
