As a vegan, I didn't get my hopes up when I turned over the package to read the list of ingredients. I was expecting to see butter and cream but squealed a little when I saw that the only ingredient is sweet potato! When you open the bag, you'll see tiny frozen discs of mashed sweet potatoes, which makes it easy to warm up a small portion. They taste incredibly smooth like a puree, which I can only attribute to them being blended instead of just mashed. They're so damn good! And while it's easy enough to bake a sweet potato in the oven and mash it myself, I can't beat the convenience of having a bag of these frozen mashed sweet potatoes in my freezer. I like to warm up a small bowl to eat on them own, but I've also discovered some healthy ways to use them in my recipes to add naturally sweet flavour, creaminess, and fibre.
