We're Drunk in Love With This Easy Homemade Cosmopolitan Ice Pop Recipe

Imagine: a craft cocktail frozen into a cool, refreshing ice pop. It almost sounds like a dream, doesn't it? No matter what time of year it is, there's nothing more enticing than a stiff Cosmo or a chilled Popsicle — at least in my opinion. Luckily, this recipe for Cosmopolitan ice pops lets me enjoy the best of both worlds (and light buzz, if I have enough).

The traditional Cosmopolitan is made with vodka, triple sec, cranberry juice, and freshly squeezed limes, which is exactly what this recipe calls for (as well as a tablespoon of sugar). Any vodka will do, so feel free to pick your favourite brand. With a refreshing hint of orange-flavoured liqueur and a dash of citrusy lime, this concoction is as fresh as can be. The prep time is superquick, meaning you can make the liquid for the pops in fewer than five minutes. But since these are Popsicles, freezing them for about eight hours is required. Just be sure to give them enough time to chill, as they taste much better when they are fully solid. If you need molds, this Popsicle kit comes with wooden sticks, a funnel, colourful plastic lids, and more. Run the molds under warm water when you're ready to serve the Popsicles, and they'll come out of the casing with ease.

Pro tip: if you're looking to get a buzz, serve these Popsicles inside a Cosmopolitan drink to create a whole poptail (Popsicle and cocktail) as opposed to just an ice pop. Cheers!

Notes

Adding too much alcohol will make it harder for the Popsicles to freeze, so be sure to only use the intended amount.
Feel free to leave the lime slices out of the actual Popsicle molds, and use them to garnish the frozen pops instead.

Cosmopolitan Ice Pop Recipe

Ingredients

  1. 10 oz. cranberry juice
    3/4 oz. triple sec
    1/3 oz. vodka
    3 fresh limes
    1 tablespoon white sugar

Directions

  1. Mix the cranberry juice and sugar together in a pitcher or tall glass until the sugar dissolves into the juice.
  2. Add the triple sec and vodka.
  3. Juice two limes and add the liquid to the pitcher.
  4. Cut the third lime into thin slices and place them into the ice pop molds.
  5. Pour the juice into the molds and carefully add a Popsicle stick inside each mold. (Make sure to insert them straight in and not at an angle.)
  6. Freeze for eight hours or until fully solid.
  7. When ready to serve, run the molds under warm water to unstick the Popsicles from the casings.
  8. Serve immediately.
