Make One of Disney World's Most Beloved Treats, the Carrot Cake Cookie, at Home With This Recipe

Longtime Walt Disney World fans may recall the Writer's Stop at Disney Hollywood Studios. The cute little cafe tucked away in the Backlot area of the park — near Star Tours and Tattooine Traders — was home to some of Walt Disney World's most delicious treats, including the carrot cake cookie. Though Writer's Stop is no more, you can still find the carrot cake cookies at The Trolley Car Café near the front of the park — and now you can have them at home, too, with this copycat recipe!

Disney Parks Blog has a recipe to re-create them, and the list of ingredients includes a whole box of carrot cake mix and some crushed pineapple (um, yum!). And while the recipe has slightly changed from the original, the cookies are still just as delicious. So, the next time you're feeling nostalgic for the cosy Writer's Stop and its most popular snack, whip up a batch of these at home and you'll be transported to the parks in no time. Disney World Carrot Cake Cookie Recipe

Ingredients

  1. 1 box carrot cake mix
    3/4 cup water (per box instructions)
    1/3 cup vegetable oil (per box instructions)
    3 large eggs (per box instructions)
    8 ounces cream cheese
    8 tablespoons butter
    1 cup powdered sugar
    1/2 cup crushed and drained pineapple
    1 teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F and grease a cookie sheet.
  2. Make carrot cake according to box instructions.
  3. Drop off rounded spoonfuls onto your cookie sheets.
  4. Bake for 10 minutes.
  5. Remove from oven and set aside to cool.
  6. For the frosting, sift powdered sugar into large bowl.
  7. Add butter, vanilla, and cream cheese.
  8. Strain pineapple and add to bowl.
  9. Mix with mixer until blended.
  10. Use 1 tablespoon of frosting to sandwich two cookies together.
