Feta Fried Eggs

Ingredients
- 1 egg
2 tablespoons full-fat feta cheese, crumbled
1/2 tablespoon chili oil, pesto, or canned tomatoes (optional)
Black pepper or spices of your choosing
1 tortilla or slice of bread
Directions
- Heat a pan over medium heat and crumble in about two tablespoons of feta cheese.
- When the cheese starts to melt, drizzle in pesto or chilli oil, or spoon on some canned tomatoes.
- Crack an egg into the pan, season as desired, then cover with a lid.
- Once the eggs are done cooking, serve over a tortilla or piece of toast.
- Garnish with extra feta and enjoy!
