Hanukkah Cookies With Blue-Marbled Icing

If you're allergic to almond extract, you can substitute it with vanilla extract.
Ingredients
- For the Dough:
2 sticks (8 ounces) unsalted butter, room temperature
3/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1 teaspoon almond extract
2 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/4 teaspoon baking powder
- For the Icing:
2 cups powdered sugar
1/4 cup half-and-half
1 tablespoon vodka
1 teaspoon almond extract
1/2 teaspoon kosher salt
Blue food coloring
Directions
- In the bowl of a stand mixer fitted with the paddle attachment or using a hand mixer, cream the butter and sugar until light and fluffy.
- Mix in the egg, vanilla extract, and almond extract.
- Next, add the flour, salt, and baking powder and stir until just combined.
- Transfer the dough between two sheets of parchment paper and roll it out until it's about 1/4 inch thick.
- Chill the dough in the fridge for one hour. Do not remove the parchment paper.
- Preheat the oven to 350°F and line two sheet pans with parchment paper.
- Remove the top sheet of parchment from the chilled dough and cut out the cookies using 2 1/2-inch holiday cookie cutters.
- Carefully transfer the cookies to the prepared sheet pans, making sure to space them one inch apart.
- Roll the remaining dough scraps between parchment paper again and chill for 30 minute before repeating.
- Bake the cookies for 13-15 minutes or until the edges are lightly golden.
- While you wait for the cookies to cool completely, prepare the glaze by whisking together the powdered sugar, half-and-half, vodka, almond extract, and kosher salt in a medium bowl until smooth.
- Add a few drops of food coloring on top of the glaze and slowly swirl the coloring into the mixture with the tip of a paring knife for a marbled effect. For more distinct marbling on the cookies, split the glaze between two bowls before swirling in the food coloring.
- Dip the cooled cookies into the glaze, letting any excess drip off.
- Place the glazed cookies on a wire rack to set for 15 minutes before serving. Enjoy!
