Hanukkah Cookies With Blue-Marbled Icing

Ingredients

  1. For the Dough:
    2 sticks (8 ounces) unsalted butter, room temperature
    3/4 cup granulated sugar
    1 large egg
    2 teaspoons vanilla extract
    1 teaspoon almond extract
    2 1/2 cups all-purpose flour
    1 teaspoon kosher salt
    1/4 teaspoon baking powder
  1. For the Icing:
    2 cups powdered sugar
    1/4 cup half-and-half
    1 tablespoon vodka
    1 teaspoon almond extract
    1/2 teaspoon kosher salt
    Blue food coloring

Directions

  1. In the bowl of a stand mixer fitted with the paddle attachment or using a hand mixer, cream the butter and sugar until light and fluffy.
  2. Mix in the egg, vanilla extract, and almond extract.
  3. Next, add the flour, salt, and baking powder and stir until just combined.
  4. Transfer the dough between two sheets of parchment paper and roll it out until it's about 1/4 inch thick.
  5. Chill the dough in the fridge for one hour. Do not remove the parchment paper.
  6. Preheat the oven to 350°F and line two sheet pans with parchment paper.
  7. Remove the top sheet of parchment from the chilled dough and cut out the cookies using 2 1/2-inch holiday cookie cutters.
  8. Carefully transfer the cookies to the prepared sheet pans, making sure to space them one inch apart.
  9. Roll the remaining dough scraps between parchment paper again and chill for 30 minute before repeating.
  10. Bake the cookies for 13-15 minutes or until the edges are lightly golden.
  11. While you wait for the cookies to cool completely, prepare the glaze by whisking together the powdered sugar, half-and-half, vodka, almond extract, and kosher salt in a medium bowl until smooth.
  12. Add a few drops of food coloring on top of the glaze and slowly swirl the coloring into the mixture with the tip of a paring knife for a marbled effect. For more distinct marbling on the cookies, split the glaze between two bowls before swirling in the food coloring.
  13. Dip the cooled cookies into the glaze, letting any excess drip off.
  14. Place the glazed cookies on a wire rack to set for 15 minutes before serving. Enjoy!
