Ingredients

  1. For the Custard:
    2/3 cup whole milk
    6 egg yolks
    3/4 cup sugar
    1 lb. mascarpone cheese
  1. For the Ladyfinger Coffee Mixture:
    1 package ladyfingers
    1/2 cup hot water
    2 tablespoons rum
    2 tablespoons instant coffee
  1. For the Whipped Cream:
    2 cups heavy whipping cream
    1 teaspoon vanilla
    1/4 cup sugar
    1/2 cup cocoa powder, for dusting

Directions

  1. Start by making the custard. Put a pot on your stovetop over medium-high heat and add the milk. As the milk heats up, add your egg yolks and then sugar. Whisk the mixture constantly until all of the ingredients are combined and it starts to thicken up. After a few minutes of whisking, your mixture should have a pudding-like consistency. Take it off the heat and transfer the mixture to a bowl, cover with plastic wrap, and let it chill in the fridge for 30 minutes.
  2. Next, make the whipped cream. Add your whipping cream to a bowl along with the vanilla and sugar. Using a stand mixer with a whisk attachment or a hand mixer, beat your ingredients on medium until they're combined. Then, turn the speed up to high and beat until you have stiff peaks of whipped cream. Be careful not to overbeat.
  3. Now you can begin assembling the tiramisu. Start by making your coffee mixture by combining the hot water, rum, and instant coffee. Then, line your ladyfingers in a 9x11 dish and use a pastry brush to generously brush each one with the coffee mixture.
  4. Grab your custard mixture from the fridge and combine it with the mascarpone cheese. Once the custard has fully come together, take half of it and smooth it out across the top of your ladyfingers.
  5. Take half of your whipped cream and smooth it out on top of the custard. Repeat the process: add another layer of ladyfingers and coffee mixture, then custard, and finally whipped cream.
  6. Once your tiramisu is assembled, dust cocoa powder generously across the top. Cover your tiramisu and allow it to chill in the fridge for at least six hours, but ideally overnight. When it's ready, cut it into even slices and enjoy!
