Pear Bread With Almond Streusel Topping

Pear Bread Recipe

Ingredients

  1. For the almond streusel topping:
    1/4 cup all-purpose flour
    1/4 cup brown sugar
    1/4 teaspoon ground cinnamon
    2 tablespoons cold butter, cut into pieces
    1/2 cup chopped almonds
  1. For the bread:
    2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon ground cinnamon
    1/2 cup packed light brown sugar
    1/2 cup granulated sugar
    1 large egg, at room temperature
    1 cup buttermilk, at room temperature
    1/3 cup canola oil or vegetable oil
    1 teaspoon pure vanilla extract
    1/2 teaspoon almond extract
    1 1/4 cups chopped pears, skin removed and tossed in 1 tablespoon of flour
  1. For the almond glaze:
    1 cup confectioners’ sugar
    1/2 teaspoon almond extract
    2 tablespoons milk

Directions

  1. Preheat oven to 350°F degrees. Grease a 9×5 loaf pan with nonstick cooking spray and set aside.
  2. In a small bowl, make the streusel topping by combining flour, brown sugar, cinnamon, and cold butter pieces. Combine until crumbly. Stir in chopped almonds then set aside.
  3. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  4. In a medium bowl, whisk together the brown sugar, granulated sugar, and egg. Whisk until smooth and there are no lumps. Whisk in the buttermilk, oil, vanilla extract, and almond extract.
  5. Slowly pour the wet ingredients into the dry ingredients and gently whisk until there are no more lumps. Be careful to not over-mix. Fold in the chopped pears.
  6. Pour batter into prepared pan. Sprinkle the almond streusel evenly over the bread.
  7. Bake for one hour, loosely covering the bread with aluminum foil after 30 minutes to prevent the top from getting too dark. Remove the pear bread from the oven and allow it to cool for 15 minutes on a wire cooling rack.
  8. Whisk together almond glaze ingredients. Drizzle glaze over loaf and enjoy!
