Baking with family and friends is one of my favourite seasonal activities during the colder months. I'm constantly pinning new recipes, and any that involve pumpkin get an automatic save. So you can envision my excitement when this pumpkin spice dump cake started circulating on TikTok.
Dump cake is different from traditional cake in that you don't combine the wet mixture with the dry cake mix. Instead, you mix and pour the wet mixture into a cake pan, followed by dumping a thick layer of box cake mix on top — hence the name, dump cake! And this particular fall-inspired dump cake recipe, which was shared by TikTok user @sammyspringate, just looks so good and indulgent (in addition to the cake mix on top, you also add a ton of melted butter). You can either follow her recipe exactly or make certain tweaks (adding chocolate chips, anyone?) like you'll see some TikTok users did in the gallery ahead. Here's the recipe:
- Combine 15 ounces pumpkin puree, 12 ounces evaporated milk, 4 eggs, 1 cup sugar, 1 tablespoon pumpkin spice, and 1/2 teaspoon salt. Mix until incorporated and pour into a greased pan.
- Dump a full box of yellow cake mix on top. Spread so it's even but do not mix! Top with 2 melted sticks of butter and a handful of pecans (or whatever toppings you prefer).
- Bake for about an hour at 350ºF.
Because it's a dump cake, the bottom layer will be too soft and mushy to be cut into individual-sized pieces; instead, use a spoon to scoop yourself a bite. For an extradelicious finish, add whipped cream and a drizzle of chocolate or caramel syrup.
