Sushi Bake

Notes
Be sure to use Japanese mayonnaise. American mayonnaise is very different, so it won't yield the best results when used in a sushi bake. Also, this recipe can be baked or broiled. If you want to use the latter method, make sure your casserole dish is broiler-friendly; metal pans are typically best.
Ingredients
- 500g imitation crab
85g cream cheese, softened
70g kewpie mayonnaise (Japanese mayonnaise), plus more for topping
1 teaspoon wasabi
1 1/2 to 2 tablespoons sriracha, plus more for topping
2 or 3 green onions, chopped
600g white rice, cooked
80ml rice vinegar
1 1/2 teaspoons salt
3 tablespoons sugar
Furikake seasoning
Roasted seaweed snack sheets
Diced avocado, for topping (optional)
Sesame seeds, for topping (optional)
Directions
- Preheat the oven to 200°C. Or, if you're using the broiler, press the "broil" button on your oven.
- Grease a medium-size casserole dish with a neutral oil, like canola oil.
- Shred the imitation crab using a fork.
- Finely chop the imitation crab.
- In a bowl, combine the imitation crab, cream cheese, kewpie mayonnaise, wasabi, sriracha, and green onions. Cut the cream cheese into chunks to make this step easier.
- Using a large spoon, combine the ingredients until evenly combined. Set aside.
- In another bowl, combine the rice, rice vinegar, salt, and sugar.
- Transfer the rice into the casserole dish, spreading it into an even layer.
- Sprinkle furikake on top of the rice.
- Spread the imitation crab mixture on top of the rice.
- Garnish with more furikake, then drizzle kewpie mayonnaise and sriracha on top.
- Bake at 200°C for 20 minutes (or broil for 10 minutes) or until the rice is slightly golden brown.
- To serve, add a spoonful of sushi bake on top of a seaweed snack sheet. Top with diced avocado and/or sesame seeds, if you'd like.
- Enjoy!
