Vegan Blueberry Cookies

Ingredients
- 128 grams all-purpose flour (or 4.5 ounces)
1/2 tsp baking powder
1/8 tsp salt
76 grams unsalted vegan butter, softened
67 grams granulated sugar (or 2.4 ounces)
64 grams frozen blueberries
80 grams white chocolate chips, chopped
Directions
- Whisk the flour, baking powder, and salt in a small bowl.
- In a separate bowl, use an electric mixer to cream the butter and sugar together until fluffy.
- Meanwhile, thaw the frozen blueberries in the microwave for 1-2 minutes, or until soft and jammy.
- Add the blueberries to the butter and sugar and beat at high speed for a few minutes until fully incorporated.
- Add the flour mixture to the dough and mix to combine.
- Fold in the white chocolate chips and freeze the dough for 30 minutes.
- Preheat the oven to 200 degrees (or gas mark 6).
- Shape the dough into 12 balls (about two tbsp of dough each) and bake for 10-13 minutes, until the bottoms start to brown.
- Serve warm or cold - they're equally good either way!
