Mini Pumpkin Muffins

Because there's no oil or butter in the recipe, these muffins will stick to your muffin tin liners even when using cooking spray.
Ingredients
- 2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2/3 cup unsweetened applesauce
1 cup canned pumpkin
2/3 cup sugar
2 eggs
2/3 cup unsweetened almond milk
2 oz. Enjoy Life chocolate chips
Cooking spray
Directions
- Preheat oven to 400°F. Line a mini muffin tin with liners and spray with cooking spray.
- Combine flour, baking powder, salt, baking soda, cloves, cinnamon, and nutmeg in a bowl.
- Combine applesauce, pumpkin, sugar, eggs, and almond milk in a separate bowl and mix.
- Combine applesauce mixture to flour mixture and stir. Add chocolate chips.
- Scoop batter into muffin tins so each is about 2/3 full. Bake for 15 minutes.
