High-Protein Mint Chocolate Chip Overnight Oats

Ingredients
- 1/2 cup rolled oats
1 teaspoon chia seeds
3/4 cup unsweetened nondairy milk (I used Ripple)
1/2 serving chocolate plant-based protein powder (I used 22 grams of Vega Performance Protein, which was 15 grams of protein)
1/2 teaspoon cocoa powder
1 tablespoon maple syrup
1/8 teaspoon peppermint extract
1 teaspoon vegan chocolate chips
3 mint leaves, chopped (optional)
Directions
- Add all the ingredients (except for the chocolate chips) to a mason jar or bowl and stir until thoroughly mixed.
- Pop it in the fridge overnight.
- In the morning, sprinkle on the chocolate chips and enjoy.
