Sushi Bake

Notes

Be sure to use Japanese mayonnaise. American mayonnaise is very different, so it won't yield the best results when used in a sushi bake. Also, this recipe can be baked or broiled. If you want to use the latter method, make sure your casserole dish is broiler-friendly; metal pans are typically best.

Ingredients

  1. 500g imitation crab
    85g cream cheese, softened
70g kewpie mayonnaise (Japanese mayonnaise), plus more for topping
    1 teaspoon wasabi
1 1/2 to 2 tablespoons sriracha, plus more for topping
2 or 3 green onions, chopped
    600g white rice, cooked
    80ml rice vinegar
    1 1/2 teaspoons salt
    3 tablespoons sugar
    Furikake seasoning
    Roasted seaweed snack sheets
    Diced avocado, for topping (optional)
    Sesame seeds, for topping (optional)

Directions

  1. Preheat the oven to 200°C. Or, if you're using the broiler, press the "broil" button on your oven.
  2. Grease a medium-size casserole dish with a neutral oil, like canola oil.
  3. Shred the imitation crab using a fork.
  4. Finely chop the imitation crab.
  5. In a bowl, combine the imitation crab, cream cheese, kewpie mayonnaise, wasabi, sriracha, and green onions. Cut the cream cheese into chunks to make this step easier.
  6. Using a large spoon, combine the ingredients until evenly combined. Set aside.
  7. In another bowl, combine the rice, rice vinegar, salt, and sugar.
  8. Transfer the rice into the casserole dish, spreading it into an even layer.
  9. Sprinkle furikake on top of the rice.
  10. Spread the imitation crab mixture on top of the rice.
  11. Garnish with more furikake, then drizzle kewpie mayonnaise and sriracha on top.
  12. Bake at 200°C for 20 minutes (or broil for 10 minutes) or until the rice is slightly golden brown.
  13. To serve, add a spoonful of sushi bake on top of a seaweed snack sheet. Top with diced avocado and/or sesame seeds, if you'd like.
  14. Enjoy!
