Low-Sugar Vegan Peach Crisp

Ingredients
- 4 cups of peaches, (about 5 to 6 fresh or a 16-ounce bag of frozen)
1/4 cup chopped dates or raisins
1 1/2 cup rolled oats
1/4 cup white whole wheat flour (or substitute a gluten-free flour like oat flour)
1/4 cup chopped pecans
1 teaspoon ground cinnamon
1/3 cup unsweetened applesauce
2 tablespoons creamy almond butter
3 tablespoons maple syrup
Directions
- Preheat oven to 350ºF. Lightly spray a 9x6 or 8x8 inch pan with cooking spray.
- Add the peaches to the prepared pan.
- In a medium bowl, mix together the oats, flour, pecans, cinnamon, applesauce, almond butter, and maple syrup.
- Spread the oat mixture evenly over the peaches.
- Bake for 40 to 50 minutes, or until the fruit is bubbling and the top is golden brown.
- Allow to cool for 15 minutes before serving.
