Let Rest

OK, ready to do less again? If you can, transfer the burgers to a platter and allow them to rest a full five minutes before dressing them. This helps the juices redistribute into the meat fibres so when you take a bite the moisture don't seep into the buns (nothing's worse than a soggy bun!) or onto your plate, resulting in dry meat.
