I tossed the veggies in olive oil and sea salt, put them and the sausage on a sheet pan, then baked them at 350F for about 20-25 minutes. Going to make some rice now and voila! Lunch is done✔️ . Posting this amazing meal prep that I made for this week. Easy, a little basic, simple. What is better than that?! Also a lil different but you can make substitutions! The concept will sill be the same ✨ 1️⃣Preheat the oven to 375 degrees Fahrenheit 2️⃣Chop up your veggies (I chose Brussel sprouts, onions, and sweet potato) 3️⃣Toss them in a bowl with seasonings and a small amount of olive oil (I used salt, lemon pepper, and old bay) spread on a cookie sheet lined with parchment paper 4️⃣Chop up your tofu into SMALL cubes after pressing it to remove the access water for the amount of time is takes you to prep your veggies 5️⃣Toss the tofu with a marinade (balsamic vinaigrette, coconut aminos, etc) and add to the cookie sheet 6️⃣Roast for around 45 minutes, making sure to mix/flip the tofu and veggies around 20 minutes so all the sides get crispy! 7️⃣Enjoy! *note: meat protein can be substituted in the place of tofu!! Sometimes food doesn’t have to be complicated to tick the boxes, fill some tummies and to get some clean plates! 👍🏼 ~ ~ As always you can see the few steps involved for this up on stories and the ingredients but it was basically: ~ ~ Diced carrots, sweet potato, Maris piper potato and parsnips...(I know parsnips are totally not seasonal but I’ve had a hankering for them!! 😋😋) - Then simply drizzle some garlic infused olive oil, mixed herbs, garlic powder and some honey... - Add some chopped up turkey sausages - Then whack into the oven for around 35/40 mins shaking the veg half way through. - When the veg is nearly cooked through and crisping up add some broccoli florets and pop back into the oven for a further 10/15mins... - Easy, easy, easy!... ~ ~ ~ Kids don’t go back to school until Thursday so a few more days to eek out the summer hols...and a few more days before I’m shouting at the kids to get dressed, eat their breakfast, brush their teeth, put their shoes on....!!! As much as I do love a routine I can’t say I’ve missed having to rush out the door every morning! It’s going to be a shock to the system!....but before school starts a few more days to go...and tomorrow we’re having a picnic to meet some of Maisie’s new class buddies!... ~ ~ Hope you guys are well! First is .....🥁 Eggs in a Nest Sheet Pan Kale Butternut squash spirals Baby broccoli @Aidells chicken and apple sausage 2 eggs Spray a parchment lined cookie sheet with avocado oil. Create nests with your hands out of the butternut squash spirals making a hole in the center. Next, mix and massage all the other veggies with avocado oil, S&P, and tons of garlic powder and lay them on the same cookie sheet next to the “nests”. Cut Aidells sausage into discs and nestle into the greens. Bake at 375 and after 10 min remove tray from oven and crack an egg into each nest hole. Bake another 18-20 min. (Depending on how runny you like your eggs, I did 18 min, for a slightly runny egg) Remove from oven and add everything but the bagel seasoning over each egg. Ingredients: 2 boneless, skinless chicken breasts 1 cup flour, almond flour, or breadcrumbs for coating Salt & pepper ½ tsp. garlic powder 2 Tbsp. olive oil, divided 1 pint cherry tomatoes 1 zucchini, diced ½ cup shredded mozzarella cheese ½ cup balsamic vinegar Fresh basil, for topping Instructions . Instructions: ▪️Preheat your oven to 425. ▪️In a small bowl, combine flour/breadcrumbs, a generous pinch of salt and pepper, and garlic powder. Press each chicken breast into the bowl, coating each side completely and evenly with the mixture. ▪️Using a couple drops of olive oil, coat the sheet pan with a thin, even nonstick surface. ▪️Place the chicken breasts in the center of the sheet pan and drizzle with a Tbsp. of olive oil over the top. ▪️Spread the cherry tomatoes and zucchini out on the sheet pan on either side of the chicken in a single, even layer. Drizzle with another Tbsp. of olive oil and sprinkle with salt and pepper. ▪️Bake the chicken & veggies in the oven for 20 minutes. ▪️Meanwhile, pour balsamic vinegar in the smallest saucepan you have and let simmer over medium-low heat for 15-20 minutes, swirling occasionally, until it becomes a thicker, reduced glaze. ▪️Remove the sheet pan from the oven, top each chicken breast with ¼ cup of shredded mozzarella cheese, and return to the oven for 5 more minutes until melty. ▪️Serve the chicken and veggies with a drizzle of the balsamic glaze and lots of fresh basil. And most veggies actually !! . I love the slight crunch of roasted kale, particularly the kale on the edges of the roasting pan. You can toss them with a bowl of grains and your favorite protein for a satisfying meal or add them to a salad. You can even bake the kale with eggs for a light meal! . I like leaving the egg yolks runny so that I can mop them up with toast. The entire dish is ready in 15 minutes, and it’s perfect for breakfast or light dinners 🙌 . INGREDIENTS: 🍳2 to 2 1/2 tablespoons olive oil, divided 🍳6 cups (120g) chopped kale 🍳6 large eggs 🍳1/4 cup (30g) chopped sun-dried tomatoes 🍳1/4 cup (28g) crumbled goat cheese 🍳salt and pepper to taste 🍳6 slices of toast INSTRUCTIONS: 1. Preheat oven to 375ºF (190ºC). Brush 1 to 1 1/2 tablespoons of olive oil over a medium rimmed baking sheet, enough to coat the baking sheet. You can also use cooking spray. Set baking sheet aside. 2. Toss the chopped kale with the remaining tablespoon of oil. Sprinkle a pinch of salt on the kale and use your hands to massage the oil into the kale. Spread kale on baking sheet. Push the kale around so that you have 6 holes in the baking sheet. Crack one egg inside each of these holes. 3. Bake kale and eggs for 5 to 10 minutes, until the egg whites are no longer runny. Start check the eggs after 5 minutes to see if the whites have settled. If you’re using a dark baking sheet, the cooking time will be shorter. Different ovens distribute heat differently, so the cooking time can vary. 4. Pull the baking sheet out of the oven. Sprinkle chopped sun-dried tomatoes and goat cheese on top. Season with salt and pepper to taste. 5. Serve the kale and egg bake with toast. 🌟🍳TRICK: If you want your eggs to look like the ones in the pics, separate the egg whites from the yolks when you crack the egg. Make sure the egg whites go inside the hole first. I seasoned green beans, sliced carrots and potatoes with EVOO and pink Himalayan sea salt. I added a little ghee and chimichurri seasoning to the organic salmon and called it a day. I threw everything in a 400 degree oven for about 12 minutes, then pulled out the salmon and the beans. I let the carrots 🥕 and potatoes 🥔 cook a bit longer until tender. . So proud 🤣😍 One of things he found was @chosenfoods Lemon Garlic dressing & marinade which is SO good and helped this meal come together in less than 30 mins 🙌 Details👇🏻 . I cut 1 lb of @butcher_box chicken breasts into 1 inch cubes and tossed them in a large plastic bag with 3/4 cup of the marinade. After marinading for 10 mins (feel free to do this a lot longer- I was just in a rush while the baby was asleep!) I dumped the chicken out onto a foil lined baking sheet, baked at 425 for 8 mins, then added a bag of organic broccoli florets. I drizzled an additional 1/4 cup of the marinade over the broccoli, tossed it all together, and stuck it back in the oven for 12 additional mins. Serve it over greens or with potatoes to keep it #whole30, or do what I did and eat it on top of some @jovialfoods penne 😍 Enjoy!
