Your meals aren't drab — they can be delicious if you know where to find the right vegan products. Vegan mac and cheese? So cheesy. Vegan pumpkin spice Oreo cheesecake? Flavourful to say the least. Now, let's take a minute to talk about nachos. You can make dairy-free, meat-less nachos no problem. There's a variety of vegan cheese out there with gloriously-gooey-sauce potential. When it comes to toppings, you won't run out of plant-based options, like jalapenos, avocado, olives, salsa, and Trader Joe's Soy Chorizo, that bring tons of flavour. Can someone pass me a plate, please? 2 / 10 Loaded Skillet Nachos With Melty Queso View this post on Instagram presenting these ridiculously loaded skillet nachos draped with melty vegan queso. i teamed up with @fieldroast to create a game-day recipe, perfect if you still need something to make for the super bowl tomorrow. the layers are tortilla chips, queso (made using their Chao slices + green chiles), black beans, jalapeños, tomatoes, red onion, guacamole, the works. recipe is below and as always check out my stories for the cooking process :-) . . . . Loaded Skillet Nachos * half a medium onion, finely chopped * 1 15 oz can black beans, rinsed and well-drained * 1 tsp chili powder + 1 tsp cumin + 1 tsp cayenne pepper * 7 oz vegan cheese (i used @fieldroast creamy original Chao cheese, cut into 1-inch cubes) * 1 4oz can diced green chiles, undrained * fresh jalapeño peppers, sliced thinly * tortilla chips * fresh pico de gallo or chopped tomatoes * guacamole * chunky salsa * optional: hot sauce, chopped red onion, cilantro, lime wedges Preheat the oven to 350°F. Heat a large skillet over medium-high heat, and saute chopped onion until translucent. Add in black beans and spices and cook for another 2 minutes, then remove from skillet. (You could also omit this step and just use refried beans). To make queso: In a separate pan, add cut chao slices and diced green chiles (with liquid) and stir until melted, breaking up the chunks with a wooden spoon until fully incorporated. (Alternatively, microwave on high for 3 min, stir, and then keep microwaving in 1-minute increments until melted). To assemble nachos, spread tortilla chips in the cast-iron skillet, and layer with half of bean/onion mixture, then top with sliced jalapeños and drizzle on some of the queso. Add another layer of chips, beans, jalapeños, and queso. Bake for 8-10 minutes until chips are crispy, then remove from oven and top with pico de gallo, salsa, chopped red onion, guacamole, and cilantro. See full #recipe below. 👇🏻 - WHAT YOU NEED: 🥑 1/4 c raw cashews, 1/2 c raw walnuts, 1 small head cauliflower (broken into small florets), a handful of mushrooms, 1/2 onion (roughly chopped), 1 large carrot (chopped into small pieces), 2 garlic cloves (peeled), taco seasoning to taste, 3/4 c water, 1 bag tortilla chips of choice, and toppings of choice, such as: pico de gallo, avocado, tomatoes, green onions, cilantro and dairy-free cheese (@daiyafoods).👌🏻🧀 - HOW YOU MAKE THEM: 🥑 In a food processor combine cashews and walnuts until a meal starts to form. Then transfer the nut mixture to a small bowl. Set aside. 🥑 Going back to your processor, add in cauliflower, mushrooms, onion, carrot, and garlic. 🥑 Pulse ingredients until everything is chopped well. You don’t want your mixture turned into a veggie mush; you definitely still want it to be chunky, or "meaty.” 🥑 Next, in a large skillet cook the chopped/processed vegetable mixture until veggies are cooked through and moisture has evaporated. 🥑 Reduce heat. Add nut mixture to skillet. Cook for an additional couple of min. 🥑 Add taco seasoning to skillet and incorporate until “meat” is well coated. 🥑 Then add in water. Simmer on low, covered for 5 min., stirring occasionally. Remove from heat when done. 🥑 Arrange tortilla chips in an oven-proof dish or skillet (we love this pan from @staub_usa👆🏻) 🥑 Top chips with some of your "meat" mixture, and sprinkle with a bit of cheese. Slice about a baking sheet full of potatoes into “chips” and lay evenly on unbleached parchment paper on a baking sheet. Bake for about 20 min flipping half way. While those are baking, slice the remainder of the potatoes (3-4 small ones?) and one carrot into large cubes and steam/boil until very soft. Place the lemon juice, steamed potato and carrot, smoked paprika, cayenne, garlic powder, and sea salt in a high speed blender and blend until queso/cheese sauce consistency. Taste and adjust seasonings as necessary. When the potatoes are done in the oven arrange on a plate and top with chopped veggies, cilantro, queso, tomatillo sauce and a squeeze of lime. Eat up!!
