These 21-Calorie Air Fryer Potato Latkes Are Vegan and Amazingly Crispy

While the whole point of eating potato latkes to celebrate Hanukkah is that they're fried in oil, to symbolize how the oil burned for eight days, there's a healthier option! This recipe involves no oil, but uses the magic of an air fryer to attain that amazing, crispy texture.

There's only one ingredient in these latkes — potatoes — so they're easy to make! Traditional recipes include egg and matzah meal or flour, so this recipe is also vegan, cholesterol-free, gluten-free, and grain-free. You'll love the crispy outside and the soft texture inside. And one latke is just 21 calories! A traditional latke has three times that, plus is much higher in fat.

I used a food processor to shred the potatoes, but you can use a grater, or look for frozen shredded potatoes to make this recipe even easier. I didn't add any salt, but you can sprinkle some on before or after cooking, or add paprika, pepper, garlic powder, or actually — Trader Joe's Everything but the Bagel Seasoning would be amazing on these!

Get creative with this recipe and mix in some chopped onion, or shredded carrots, courgette, or sweet potato — the latke possibilities are endless. Although this is a traditional Hanukkah recipe, since they're so healthy, you can enjoy these any time of the year. In our house, we love to make loaded potato latkes and cover them with sautéed mushrooms and onions and roasted broccoli. What will you top your latkes with?

Easy Air Fryer Potato Latke Recipe

Ingredients

  1. 2 pounds of white potatoes, about 5 medium (I used yukon gold, but russet will work)

Directions

  1. Put water and a steamer basket in a pot on high heat.
  2. Wash the potatoes (I left the peel on), and shred them using a food processor or grater.
  3. Steam the shredded potatoes for about six to eight minutes until they are slightly softened and lose that crunchy raw texture.
  4. Scoop up small handfuls of the shredded potatoes with a spoon or pair of tongs, and drop them onto the air fryer tray, making flat circles about two to three inches in diameter. Continue until the air fryer is filled with a single layer of latkes. Depending on the style and size of your air fryer, you may need to do these in two batches. I fit nine latkes on my tray and did a second batch to make the last three latkes.
  5. Air fry at 450 degrees for about 30 minutes, or until golden brown and crispy.
  6. Enjoy immediately with applesauce or ketchup — both are delish!
