What's for dinner tonight? How about these lazy enchiladas? This viral recipe that has over 6.7 million views on TikTok from @saltycocina (Ana Regalado) is made with just three store-bought ingredients: a box of frozen taquitos, a can of enchilada sauce, and a bag of Mexican blend shredded cheese. Just bake or air fry the taquitos in a dish for 10 to 12 minutes. Top the cooked taquitos with two cups of the enchilada sauce and shredded cheese, and bake for another 10 minutes. Enjoy them as is, with a side of refried beans and rice, or top with fresh shredded lettuce, chopped red onion, tomatoes, and coriander, and a drizzle of crema Mexicana.

Regalado shared this recipe as a response to a previous enchilada video of hers where someone commented that she was making enchiladas"the lazy way". But if you watch that first video, you'll see that it's very involved with numerous steps, and is far from lazy. Instead of getting bothered by the negative comment, Regalado turned it into a positive and showed her followers the truly lazy way to make enchiladas — although buying it at a restaurant would be even lazier.

Viewers rushed to the comments to praise this three-ingredient recipe. One viewer commented, "I just made these tonight and they were BOMB!" Another viewer wrote, "I have made these many times and they are soooooo good!! Even better the next day." The best comment, though, "You are the Mom that this world needs."
