Baking is admittedly not my forte, so when I see a drool-worthy dessert recipe come on up my feed and see that it requires more than a few ingredients or steps, I immediately tap out and move on to the next. Imagine my delight when I recently discovered fluffy cloud bread on TikTok and realised the recipe called for just three ingredients. Although making an entire loaf of bread might sound pretty intimidating, cloud bread proves otherwise.

Videos of the cotton candy-like loaf, which some say taste similar to a meringue, have popped up across the platform over the past few days, and the bread looks almost too pretty to eat. Most TikTok bakers are following these simple instructions to make cloud bread of their own. Some TikTokers are also mixing in additions like almond slices, oreo crumbs, and blue food colouring to take their cloud bread to the next level, so feel free to experiment with your favourite toppings.

  1. Combine three eggs, 30 grams of white sugar, and 10 grams of corn starch in a bowl.
  2. Whisk all the ingredients together until the mixture becomes super-stiff. (Many TikTok bakers recommend using an electric mixer as opposed to a regular whisk to speed up the process.)
  3. Lay out the mixture on a baking sheet into a half-sphere shape.
  4. Bake for about 25 minutes at 150 degrees Celsius (or gas mark 2).

While a different kind of cloud bread made waves on Pinterest back in 2016, in the form of a flatter bread used for sandwiches as a low-carb alternative, the recent TikTok iteration is a puffy loaf of bread that's similar to angel food cake or a large macaron. Though it's unclear where the latest trend originated, it looks like many people on TikTok were inspired by a recipe from TikTok user @linqanaaa (or @linqkitchen on Instagram), after she posted her version last week.
