Not only are they a staple on almost any holiday table, but they complement just about every festive dish you'd find beside them. Plus, carrots have a relatively long shelf life, making meal prep easier while you juggle all your other holiday tasks.
This year, I'm giving carrots their long-overdue star-of-the-show moment. From hummus to cake to soup, I'm reinventing carrots for the holidays, and not even fan-favourite potatoes can get in my way.
