Ingredients

  1. β€’ 3 large sweet potatoes
    β€’ 1/4 milk (or water from boiling potatoes)
    β€’ 2 sticks of butter
    β€’ white and brown sugar (no more than 1/2 cup of each)
    β€’ 1 tablespoon pure vanilla extract
    β€’ 1 teaspoon ginger
    β€’ 1 tablespoon nutmeg
    β€’ 1 1/2 tablespoon cinnamon
    β€’ 1 box of yellow, vanilla, or spice cake mix

Directions

  1. Peel, slice, and boil sweet potatoes until tender. Mash them up.⁣
  2. While hot, add 1/2 stick of unsalted butter to potatoes. Stir.
  3. Add the vanilla, nutmeg, ginger, and cinnamon. Add a sprinkle of salt. Then add sugar and the milk. Stir.
  4. Spread the sweet potato filling into a pan. Sprinkle on the cake mix and spread it out. Top with slices of butter.
  5. Bake at 350 until the top is golden brown. It should take about 45 minutes, but oven times may vary, so be sure to check on it. Let the cake cool for 15 to 20 minutes, and enjoy!
