@our_cookingjourney Live to 100, Minestrone! 🍲 This minestrone is comforting and delicious, full of vegetables and legumes. Sardinia is one of the rare Blue Zones in the world, which means people are more likely to live to 100 years old. This, of course, is because of many factors, but one in particular is the diet. Our diet is full of seasonal vegetables and legumes, and this minestrone is something that you will find very often. Sometimes, to add as well some carbs, we also add fregula, a type of pasta similar to giant cous cous. You can use either dry chickpeas and beans for this and soak/cook them in advance, or you can use them straight from the tin! Here are the ingredients 👇 Serves 4 1 onion (roughly chopped) 2 celery sticks (chopped into large chunks - about 1cm cubes) 1 large carrot (chopped into large chunks - about 1cm cubes) 2 garlic cloves (finely chopped) 3 sun-dried tomatoes (finely chopped) 15g basil (finely chopped) 15g parsley (finely chopped) 250g tin of barlotti beans 250g tin of chickpeas 1 large potato 3 large fresh tomatoes (roughly chopped into large chunks) Olive oil Savoy cabbage (7 leaves roughly chopped) Pecorino or / and stale bread to grate at the end Salt and pepper #minestrone #liveto100 #healthyfood #wintersoup #comfortfood #seasonal #recipeshare #sardinia #italianfood #vegetarian #italianrecipe #italiancuisine #soulfood

From the blue zone of Sardinia, Italy comes this comforting soup, which the original creator calls "live to 100" minestrone. You'll need sun-dried tomatoes, garlic, parsley, olive oil, and lots of vegetables. Add more tomatoes, potatoes, and beans to finish it off.
