Pancake day is one of the best days of the year. When else do you give yourself free rein to eat copious amounts of sweet and savoury treats for breakfast, lunch, and dinner? This year, Shrove Tuesday falls on 21 Feb. and despite having the day marked in our calendars, it somehow manages to creep up on us before we're ready, which is why this TikTok hack will totally change your life.

Texas-based food blogger Deimante Dabravolskis posted a video to TikTok and Instagram showing freezer pancakes and, quite frankly, it's genius. The video has already got over 1 million likes as she takes the stress out of pancake day by making the batter, pouring it into ice cube trays, and freezing it ahead of time. When pancake day rolls around — or any day for that matter — she simply takes out the frozen batter, pops it on the frying pan, and lets the magic happen.

Her particular recipe works for American-style pancakes rather than French crêpes, and she adds fruit and chocolate to the batter for a sweet take. How to Make Frozen Pancakes | TikTok

Ingredients

  1. 4 eggs
    125ml milk of choice
    2 tsp vanilla extract
    4 tbsp pure maple syrup
    2 tbsp baking powder
    Pinch of salt
    189g of gf flour
    Toppings such as berries, chocolate chips

Directions

  1. Add eggs, milk, maple syrup, and vanilla to a bowl and whisk.
  2. Then, add baking powder, salt, and flour to the bowl. Whisk to incorporate. Don’t over mix.
  3. Pour the batter into a regular size ice cube tray. Add toppings of your choice and freeze.
  4. When ready to use, heat some oil in a frying pan on LOW heat and add the frozen batter cubes. These will take a few minutes to fully melt, gently press down on each pancake to help the batter melt. Use a cover to help it melt quicker.
  5. Flip each pancake and cook until no more batter is oozing out.
  6. Enjoy with added sides of your choosing.
