@whatinthechef Bean Burrito Ingredients: - 1/2 Red Onion - 2 Garlic Cloves - 1 heaped tbsp Tomato Purée - Pinch of Salt - 1/2 tsp Cumin Powder - 1 tsp Paprika - 1/2 tsp Cayenne Pepper - Sprinkle of Dried Oregano - 1 Tin Kidney Beans - 1 Lemon Wedge - Small handful Fresh Coriander - Water as required - 1 Tortilla Wrap - 1 tbsp Sour Cream (or cream cheese if you don’t have it) - Flavoured Rice (left over or packet rice) - Mixed Grated Cheese Method: 1. Heat 1-2 tbsp of oil in a pan. Dice the onion, chop the garlic, then add them to the pan. Add a little salt, cook and stir for 5-10 minutes till softened. 2. Then add in the tomato purée, followed by a splash of water and stir it in till a sauce had formed. Cook for 2 minutes and then add the spices. Cook for a further 2 minutes till oil separates. 3. Add in the drained kidney beans and stir. Cook for 2-3 minutes. Then add in just over 1/2 mug of water. Bring up to a boil, drop the heat to low, put the lid on and simmer for around 8-10 minutes. 4. Once done, remove the lid then add in a squeeze of lemon, followed by the coriander. Stir through, cook for a minute (or until you decide any sauce down to your desired consistency). 5. Love a burrito? If you don't yet, you will now. This recipe is quick, filling, cheap, and tasty, and a great one for veggies. All you need for the filling is a bundle of cupboard essentials, from garlic and tomato puree, to a 65p tin of red kidney beans.
Dice half a red onion and chop two garlic cloves and throw them in an oiled pan until softened. Add a tablespoon of tomato puree, salt, and a splash of boiled water for two minutes before throwing in half a teaspoon of cumin powder, half a teaspoon of cayenne pepper, one teaspoon of paprika, and a sprinkle of dried oregano and cook for two minutes. Then add drained kidney beans and leave for a further 2 minutes. Half a mug of boiled water is then included before leaving to simmer for 8-10 minutes. Once done, add a squeeze of lemon and some coriander. Then add sour cream and rice (microwaveable is fine), the filling, and cheese onto a tortilla, before rolling and toasting to your liking. You can make enough for three portions, too!
